I wanted to share this delicious GF Fried Ravioli recipe I made the other day. For years high-quality gluten-free ravioli seemed like it was out of reach for gluten-free me. Thanks to Manini’s (www.maninis.com,) Ravioli is now possible! Here’s my version of gluten-free fried ravioli!
GLUTEN FREE FRIED MANINI’S RAVIOLI (contains egg and dairy)
1 Box Manini’s Ravioli
1/2 Cup Gluten-free panko bread crumbs
1/2 Cup Manini’s ancient grain flour blend
1 cup Milk or buttermilk (I used milk curdled with a bit of lemon juice)
2 inches of olive oil in a pan or other oil of your choice (I used a combination of coconut oil and palm oil)
Place Panko and Manini’s ancient grain flour blend together in a bowl and add oregano, salt and pepper, stirring gently.
Place milk or buttermilk in a separate bowl.
Prepare a sheet pan with paper towels.
Pour 2 inches of oil into a pan and turn heat on medium high. Bring the oil to about 325 degrees. It really helps to have a thermometer! But if you don’t, test the oil with a few drops of the flour mixture.
Working in batches, dip the GF Ravioli in Milk to coat completely. Allow the excess buttermilk to drip back into the bowl. Dredge ravioli in the Panko Bread Crumb Flour mixture. Place the ravioli on a baking sheet, and continue with the remaining ravioli until finished.
Fry the Ravioli in batches turning if you need to for about 5 minutes or until brown. If the oil begins to sputter, turn the heat down a bit. Remove the fried Ravioli and let them drain on the prepared sheet pan with paper towels.
