Tomato Soup @bklynallergymom

What are your favorite stand-by allergen-free gluten-free comfort foods? Tomato soup? Toasted cheese? Burgers and fries?

Yesterday, teenager emerged from her room and showed up in the kitchen ready for conversation. She flipped through a circular and found a can of tomato soup with a picture of such soup alongside a toasted cheese sandwich and declared – MOM! I want that soup! Can I have that soup?

(Pause: When teenager speaks more than grunts and sounds, one must listen.)

So after a frustrating web search trying to figure out if said can of tomato soup was alright for us, I searched the ingredients and found this blog by Katie, Produce on Parade. Katie created her own version of tomato soup for her husband. So I decided I would make the recipe – Please visit Katie’s blog for more unique recipes.

Below is how I made the soup based on the one I found on Produce on Parade. Please excuse the blurry picture. Apparently I need glasses.

Cheater Tomato Soup Recipe (adapted from Produce on Parade)

2 cans organic diced tomatoes

1/4 cup water

2 tsp tomato paste

1/8 cup brown sugar – or a bit over if you like it sweeter which we do

1/2 tsp Herbamare (or another seasoning salt)

1/2 tsp xanthan gum (sub arrowroot, corn, tapioca starch – or another type of flour if you’re opposed or don’t have the xanthan)

2 bay leaves

dash pepper

Go Veggie! parmesan-like cheese product

(optional: 2 tsp calcium powder)

Place all ingredients except the bay leaves in blender or Vitamix and mix for about 2 minutes. Place entire mixture and bay leaves into a heavy bottomed bot and place on medium heat. Stir occasionally until the soup reaches a deep red color. Ten to twenty minutes should do the trick.

Serve in bowls and top with Go Veggie parmesan like cheese product.
