Maybe you read my post last year and my recipe for Pumpkin Spiced Coconut Latte Mix for a Crowd. It WAS a crowd pleaser! This year, I’m pleased to announce that So Delicious has made our lives much easier, by creating Pumpkin Spice Latte Drink that we can buy at the store. I was so lucky that they reached out to me and asked if I would like some. I completely drank it with my coffee before I could get a picture – how terrible (and great at the same time) is that? To make your own pumpkin spiced latte, fill your coffee cup halfway with warmed Pumpkin Spiced Coconut Milk Beverage, then add coffee and stir. SODelicious_EggNog_Bklynallergymom_DSC_0500I also happen to love (and miss) traditional Egg Nog. I decided, having devoured the Pumpkin Spice Coconut Milk beverage, that I could drink the Nog Coconut Milk Beverage earlier than Thanksgiving or Christmas, like, today for example. I opened it up and drank it. Yep. Delicious. And I decided to top it off with some Soyatoo Rice Whip, which is a dairy free, soy free whipped topping, although it has an allergen statement of shared equipment with milk and peanuts – I’m not anaphylactic to either. The So Delicious line of specialty coconut milk beverages includes:

Mint Chocolate Coconut Milk Beverage

Nog Coconut Milk Beverage

Pumpkin Spice Coconut Milk Beverage

Mock Nog

1 Cup So Delicious Unsweetened Coconut Milk

pinch cinnamon

pinch of freshly ground nutmeg

dash of vanilla

**Edited 12.19.2013: a previous post called for XANTHAN GUM – use only if you’re using this recipe with Rice Milk as it’s thinner. (1 – 2 tsp)

1 whole clove

Agave or other sweetener if desired

Warm everything together except xanthan gum. Stir with a fork. Add Xanthan gum, warm again, mixing well – bring to a simmer until the mixture thickens. Pour into a coffee mug and let stand for a bit – or refrigerate.

  1. I’m completely jealous that you can use Soyatoo. I want a whipped cream soooooooo bad! How are things in NY??

      Caroline! Yes, I found Soyatoo at my local health food store and snapped it up excitedly, of course I didn’t have my glasses so I didn’t read the allergen statement. So Delicious also has a line of culinary coconut milk, so one could make their own whipped topping! I may do that this evening when I’m going to a dinner. My friend can’t eat eggs and she’s making an egg heavy desert so we’re going to have some Mint Chocolate Coconut Milk Beverage with whipped coconut cream! Yum….
