I asked Cherry Man about the corn syrup – not to be confused with high fructose corn syrup – and this is what they had to say:
The CherryMan Farm to Market Maraschino formulation includes a blend of corn syrup and sugar as the sweetener. Many consumers are sensitive to the presence of high fructose corn syrup, so this ingredient, while often used as a sweetener for standard maraschinos, was not utilized. Corn syrup remains in the blend for two simple reasons. First, sugar costs are historically volatile and much higher than corn derived alternatives. By using a blend, we can keep the product cost in line and allow CherryMan Farm to Market Maraschinos to be a good value for most consumers. Second, the FDA recognizes corn syrup as a natural ingredient. We will leave it to the consumer to judge for him or herself, but we think corn syrup is just fine, particularly when you consider the amount (just over 1 gram) in one CherryMan cherry.
If you or your loved one has a corn allergy, discuss what is safe for you with your doctor.
The little 2oz bottles are adorable. I was drawn to this product since I like to take cherries with me on Tuesday nights where my husband and I present live Jazz at our Konceptions Music Series at Korzo Restaurant in Brooklyn. It is there where my favorite bartender, Matt, makes me an amazingly good Old Fashioned based on my recipe below. I always take extra cherries because once someone sees my Old Fashioned, they want one!
Never had an Old Fashioned? Here’s my favorite recipe:
1/2 orange round (fresh / organic if you can find it)
2 dashes bitters
1 tsp or more sugar
1 ounce bourbon (or more!)
Muddle the orange, sugar, 1 cherry and the bitters in a glass with a small spoon, or a fork. Pour in the Bourbon. Stir, then let sit for one minute to macerate the sugar. Add ice, and finish with soda. Top with another cherry and garnish with an orange slice.
