This morning as I lay in bed watching the DVD “Julie & Julia” attempting to catch up on the Oscar®-nominated movies I missed, I began thinking of what to make for our very own Oscar® Party tomorrow.

Here’s my list so far:

Chicken Enchiladas (without cheese and creme sauces of course!)

Salsa Verde

White Bean Salad with Tuna

Olive Tapenade & Rice Crackers

Guacamole & Chips

Vietnamese Spring Rolls (without Tofu)

Veggie Tray with Carrot Dip

Making Chicken Enchiladas means I need to make chicken broth (I pull the chicken and after I season it roll it into corn tortillas for Enchiladas).  There is has the added benefit of becoming chicken soup for dinner this evening!  Our daughter has been craving chicken soup recently, although all she ever eats is the chicken and the broth, she insists on having the vegetables as well, which, when the bowl is dry, are pushed to the side.

None of the above recipes require anything special and what’s more, you can find most of them in any cookbook you have lying around the house.  I make my enchiladas completely from scratch with the exception of the corn tortillas (someday I’ll share my personal recipe).  I also like to add the rice and beans to the chicken and roll them up, much like a mini burrito. I sometimes skip the part where they get baked again.  Luckily, I can find the most delicious fresh preservative free tortillas in the bodega on 23rd Street and 5th Avenue for .89.  My only Allergy Mom piece of advice is to make sure you read the ingredients on all canned items before you adding it to your recipe.
